Legumes and You ~ a Better Protein
Meat has its drawbacks as a food source. These Bean and Vegetable Burritos are chock full of fiber and protein. We would suggest omitting the corn for a lower carb version. Try adding tomatoes instead (during the last couple minutes cooking time) for color and texture. Low carb burrito wraps are also recommended.
Great Northern White Chili is a hearty vegetarian dish that will warm you and satisfy your hunger. Perfect for lunch—make a batch this weekend and enjoy as an alternative to take-out meals during the week—or pair with a green salad for a meatless dinner.
If you have a burger urge, try Garbanzo Bean Burgers, which pack 8g of fiber and 8g protein per serving.
Meatless Monday offers additional tips for painlessly reducing meat consumption. Even if you start by going meatless one day a week, or one meal per day, you will soon develop a different attitude towards meat as an essential plate component.
Try a meatless wrap filling or salad topping from Yoga Journal. The Curried Chicken-less Salad uses tofu and tempeh, both derived from soybeans, to produce a healthful alternative to chicken salad. To adapt this recipe under the Ray & Terry guidelines, we suggest trying Greek Yogurt instead of mayonnaise and a pinch of stevia in place of the agave/syrup.

Which Diet is Better?
A recent Israeli-American study, the Dietary Intervention Randomized Controlled Trial (DIRECT), asked the question, "Which diet is better for weight loss?" The participants were divided into three groups and assigned to follow the low-fat, low-carb, or Mediterranean diet.
More than three quarters of the test subjects stuck to the diet for the entire two year period of the study, making for a consistent long term evaluation. The low-carb dieters not only accomplished an average of 60% more weight loss than the low-fat dieters, but they also exhibited better results in cholesterol levels and indicators of inflammation.
