Healthy Summer Eating

Summer is a time to celebrate ice cream and burgers, right? Similar to the winter holiday season, many summertime gatherings are built around food and you might get nervous that your eating plan will be derailed by a tempting pasta salad. Don't worry-- you don't have to clog your cells with carbohydrates and high fat dairy in order to enjoy summer dining. We have some suggestions to preserve the taste (and your waist) throughout the season.

>>PROTEIN
Red meat is not an ideal food, so start by selecting a healthy protein like tofu, seafood or chicken breast. With a little creativity and a few spices, your mouth will enjoy the party even without burgers and hot dogs.

Crab Cakes with pepper sauce are a spicy addition to the menu. Experiment by using salmon instead of crab and you'll have your own tangy salmon burgers, gaining omega-3s and lessening the amount of cholesterol in the original recipe. At less than 200 calories per serving, you get 22 grams of protein and a good dose of the good fats.

Barbequed Tofu is an amazingly simply meatless dish that can be baked or grilled. Serve with a veggie slaw for a summery feeling meal. Try soy yogurt in the vegetable slaw for even more protein.

This recipe for Chicken Satay is extremely simple and perfect for summer cooking. Select the peanut sauce carefully—be aware of the carb levels and sugar content of bottled sauces. We suggest substituting a mixture of natural peanut butter, lime juice, and a little soy sauce (add hot sauce or red pepper flakes if desired) to make a basting sauce.

Portobello "burgers" are another substitute for the traditional beefy burger. The thick mushroom lends itself perfectly to grilling and even resembles the more typical beef burger.

>>CONDIMENTS
Sauerkraut, relish, ketchup, mustard… condiments aren't all bad, but we do recommend making careful choices when it comes to toppings.

>>DESSERT
Summer fruit parfaits are a tasty way to add sweetness at the end of a meal without undoing the day's nutritional accomplishments. For this recipe, omit the honey and use a little stevia if a sweeter taste is desired. We also suggest low fat Greek yogurt instead of regular yogurt for a creamy and healthy parfait).

Frozen fruit is another suitable summer dessert option. Try freezing a selection of pineapple, strawberries, raspberries, blueberries, cherries and melon. For a nicer presentation (and to earn the kids' vote) pop the fruits onto wooden skewers prior to freezing.


>>DRINKS
We already know that red wine offers some health benefits. To jazz it up for summer setting, make a simple Ray & Terry's Pseudo-Sangria. It's less fizzy than typical sangria to minimize the amount of acidic soda water and uses stevia to sweeten the mix.

Ray & Terry's Pseudo-Sangria
1 bottle of Pinot Noir (or your favorite red wine)
2 limes, sliced in wedges
1 lemon, sliced in wedges
1.5 oz Grand Marnier
1 packet (500mg) stevia
1 cup raspberries
1 cup club soda

Squeeze citrus wedges into a pitcher (include skins after squeezing) and add wine, Grand Marnier, ½ cup raspberries, and stevia. Mix and chill overnight. Just before serving, add ice, club soda, remaining berries, and a toast to your health!

Caloric Restriction May Protect Brain

So far, there is scarce evidence of the benefits of caloric restriction in humans. However, a new study showed that older adults on a 30% reduced calorie diet had better memory test results as well as improved indicators of metabolic health like levels of insulin and C-reactive protein, a marker of inflammation.

Plums Trump Blueberries

Researchers examined several varieties of plums and found that one plum yields more antioxidants than the number of blueberries typically consumed. They also discovered that "the phytonutrients in plums inhibited in vitro breast cancer growth without adversely affecting normal cell growth." This knowledge will likely lead growers to breed fruits with enhanced benefits.

PolyPill Could Protect Against Heart Attacks

A cheap five-in-one pill can guard against heart attacks and stroke, research suggests.

The concept of a polypill for everyone over 55 to cut heart disease by up to 80% was mooted over five years ago, but slow progress has been made since. Now a trial in India shows such a pill has the desired effects and is safe and well-tolerated by those who take it.

Stem Cells Without Embryos

Scientists are working on a new stem-cell technique to revolutionize care for disorders as diverse as diabetes, Alzheimer’s and muscular dystrophy. The method creates stem cells without using and destroying human embryos. “This is the breakthrough the stem-cell field has been waiting for,” said Beth Seidenberg.

Too Much Sugar Shortens Life Span

A recent study showed that genetic inactivation of the glucose-signaling pathway prolonged life span in yeast. Activating the same pathway shortened life span and blocked the longevity effects of calorie restriction. Glucose signaling also affected mitochondrial respiration and increased oxidation.

Protein Cocktail Used to Create Heart Cells

Treating embryonic cells from mice with a cocktail of proteins triggers production of new heart-muscle cells, according to research published in the journal Nature. The recipe, developed by scientists at the Gladstone Institute of Cardiovascular Disease, in San Francisco, could someday be used to make tissue for cell replacement therapies that restore function to an ailing heart.

Too Much Red Meat May Shorten Lifespan

The study of more than 500,000 middle-aged and elderly Americans found that those who consumed about four ounces of red meat a day (the equivalent of about a small hamburger) were more than 30 percent more likely to die during the 10 years they were followed, mostly from heart disease and cancer.
