
- 4 boneless skinless chicken breasts
- ½ cup reduced fat (2%) Greek yogurt
- 1 Tbl lime juice
- 1 tsp chili powder
- ½ cup corn kernels, thawed from frozen
- 1 can (14.5 oz) black beans, rinsed & drained
- 1 cup chopped cilantro
- 3 Tbsp. Smart Balance mayonnaise
- Salt & pepper to taste
Gently stir together yogurt, mayo, lime juice, chili powder, salt and pepper. Combine chicken and other ingredients in a bowl and cover with sauce mixture. Toss to coat.
Serve on lettuce leaves or greens.
