• 4 boneless skinless chicken breasts
  • ½ cup reduced fat (2%) Greek yogurt
  • 1 Tbl lime juice
  • 1 tsp chili powder
  • ½ cup corn kernels, thawed from frozen
  • 1 can (14.5 oz) black beans, rinsed & drained
  • 1 cup chopped cilantro
  • 3 Tbsp. Smart Balance mayonnaise
  • Salt & pepper to taste
Place chicken breasts in large pot, cover with 1½ quarts water. You can add cilantro stems and whole dried chilies to the water for additional flavor. Bring to a boil over medium high heat. Reduce heat to low, simmer for 10 minutes. Remove from heat. Let sit in liquid for 20 minutes. Remove and shred well, removing any remaining fat pieces.

Gently stir together yogurt, mayo, lime juice, chili powder, salt and pepper. Combine chicken and other ingredients in a bowl and cover with sauce mixture. Toss to coat.

Serve on lettuce leaves or greens.
