Hold the Oil

Danger: When oils are heated to temperatures above 320 degrees Fahrenheit, toxic chemicals are formed. Ray & Terry recommend stir-frying instead of deep-frying. A healthy method is to put water in a wok and then add a small amount of extra virgin olive oil. Keep the temperature at a moderate level and cook food only briefly.
