Carrots are fine to eat, but we do not recommend juicing carrots and other roots often as they have a high sugar content and their healthy fiber content is lost during juicing. However, for individuals who are not on the low-carb corrective diet, carrots can be juiced in moderation with other vegetables. We strongly recommend including other low-glycemic vegetables such as kale and celery to maintain a nutritious and tasty juice.
